Description

A creamy soup filled with hearty potatoes, topped with crispy bacon, melted cheddar, and green onions, perfect for cozy meals.

Ingredients

  • 4 large russet potatoes, scrubbed and diced
  • 4 cups chicken broth or vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onions for 5 to 7 minutes until soft and translucent.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add the diced potatoes and broth, followed by thyme, smoked paprika, salt, and pepper.
  5. Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes until the potatoes are tender.
  6. Blend the soup until smooth or slightly chunky, as preferred.
  7. Stir in the heavy cream, shredded cheddar, and sour cream, and simmer until the cheese is melted, about 5 minutes.
  8. Taste and adjust seasoning as needed.
  9. Ladle into bowls and top with crumbled bacon, additional cheese, and chopped green onions before serving.

Notes

Use fresh ingredients for the best flavor. Experiment with additional spices or toppings to customize your soup.
