  • 1 onion, minced

  • 3 cans (10 oz / 283 g each) beef broth
  • 1 can (28 oz / 794 g) diced tomatoes
  • 2 cups (480 ml) water
  • 1 can (10.5 oz / 298 g) condensed tomato soup
  • 1 bay leaf
  • 1 tablespoon (15 ml) parsley
  • 1 teaspoon (5 ml) minced garlic
  • 1/2 teaspoon (3 ml) dried thyme
  • ground black pepper, to taste


Instructions

  1. Begin by assembling all necessary components.
  2. Place a large pot on the stove over medium-high heat and add the ground beef, breaking it apart as it cooks. Stir frequently until the beef is browned evenly and fully cooked through, then remove and dispose of any excess fat.
  3. Add the onion, carrots, celery, and barley to the pot. Introduce the beef broth, diced tomatoes, water, and condensed tomato soup to the mixture. Season with the bay leaf, parsley, garlic, thyme, and black pepper. Increase the heat to bring the mixture to a boil, then lower the heat and cover the pot.
  4. Let the soup simmer for about 2 hours, ensuring to stir it from time to time. Before serving, take out the bay leaf.
  5. Serve while hot and relish the flavors!
