Description

A delightful casserole combining tender chicken, creamy soups, and rice, topped with crispy French fried onions.


Ingredients

  • 3 cups cooked white rice (brown rice for nuttiness)
  • 2 cups shredded cooked chicken (use rotisserie chicken or leftover turkey)
  • 1 can cream of chicken soup (low-sodium or homemade alternatives)
  • 1 can French onion soup
  • 1 cup sour cream (dairy-free yogurt can be used)
  • 1 cup shredded cheese (mozzarella for milder taste, Swiss for nuttier)
  • 1 cup French fried onions (divide for topping and inside the casserole)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • To taste: salt and black pepper
  • 1/4 cup chopped parsley (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, one-half cup of shredded cheese, garlic powder, onion powder, salt, and black pepper.
  3. Mix everything until well combined.
  4. Pour the mixture into the greased baking dish, spreading it out evenly.
  5. Top the rice bake with the remaining shredded cheese and French fried onions.
  6. Bake the casserole for 25-30 minutes or until bubbly and golden brown on top.
