Description

A comforting coconut lime fish soup that combines fresh fish, aromatic spices, and creamy coconut milk.

Ingredients

  • 1 pound fish fillets (such as cod or tilapia)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 4 cups fish stock or vegetable broth
  • 2 limes (juice and zest)
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking them until they turn translucent and fragrant.
  2. Pour in the coconut milk and fish stock, bringing the mixture to a gentle simmer.
  3. Add the fish fillets and grated ginger to the pot. Cook for about 5-7 minutes or until the fish is tender and flakes easily.
  4. Stir in the lime juice and zest. Season the soup with salt and pepper according to your taste.
  5. Serve the soup warm, garnished with fresh cilantro for a pop of color and flavor.

Notes

For best results, use fresh fish fillets and add a splash of lime juice before serving if reheating leftovers.
