Ingredients
- 1 pound fish fillets (such as cod or tilapia)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 4 cups fish stock or vegetable broth
- 2 limes (juice and zest)
- 1 teaspoon fresh ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking them until they turn translucent and fragrant.
- Pour in the coconut milk and fish stock, bringing the mixture to a gentle simmer.
- Add the fish fillets and grated ginger to the pot. Cook for about 5-7 minutes or until the fish is tender and flakes easily.
