Description

Caramelized onions, melted cheese, and crusty bread make for a warm and comforting classic French onion soup.


Ingredients

  • 4 large onions, sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 cup white wine
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste
  • 1 loaf of French bread, sliced
  • 1 ½ cups grated Gruyere cheese
  • 2 cloves of garlic, minced


Instructions

  1. Melt the butter with the olive oil in a large pot over medium heat.
  2. Add the sliced onions and stir occasionally, cooking until caramelized, about 30 minutes.
  3. Once the onions are golden, incorporate the wine, scraping the bottom to deglaze.
  4. Pour in the beef broth, thyme, salt, and pepper; let the soup simmer for about 20 minutes.
  5. While the soup simmers, preheat your oven to 400°F (200°C). Spread the minced garlic on the bread slices and bake until golden.
  6. Ladle the soup into oven-safe bowls, top with a slice of toasted bread, and sprinkle Gruyere cheese generously.
  7. Broil the bowls until the cheese bubbles and is golden brown.
  8. Serve hot and enjoy!

Notes

For added flavor, consider garnishing with fresh herbs or a sprinkle of ground nutmeg.
