A creamy and comforting garlic soup that transforms roasted garlic into a sweet delight, perfect for any occasion.
Ingredients
- 1 bulb of garlic
- 1 onion, diced
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft.
- In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Squeeze the roasted garlic cloves into the pot and stir.
- Add vegetable broth and bring to a simmer. Cook for 10 minutes.
- Blend the soup until smooth.
- Stir in heavy cream, seasoning with salt and pepper to your liking.
- Serve hot, garnished with fresh herbs.
Notes
Taste as you go when adding salt and pepper. For a kick, add a pinch of crushed red pepper.
