Description

A creamy and comforting garlic soup that transforms roasted garlic into a sweet delight, perfect for any occasion.


Ingredients

  • 1 bulb of garlic
  • 1 onion, diced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (such as thyme or parsley) for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft.
  2. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Squeeze the roasted garlic cloves into the pot and stir.
  4. Add vegetable broth and bring to a simmer. Cook for 10 minutes.
  5. Blend the soup until smooth.
  6. Stir in heavy cream, seasoning with salt and pepper to your liking.
  7. Serve hot, garnished with fresh herbs.

Notes

Taste as you go when adding salt and pepper. For a kick, add a pinch of crushed red pepper.
