Ingredients

  • 2 cups (480 ml) whole milk
  • ½ cup (100 g) sugar
  • ¼ cup (30 g) cornstarch
  • 1/4 teaspoon (1 ml) salt
  • 4 large egg yolks
  • 4 ounces (113 g) dark chocolate, finely chopped
  • 2 tablespoons (28 g) unsalted butter, cut into ½-inch cubes
  • 2 teaspoons (10 ml) vanilla extract
  • 1 tablespoon (15 ml) coffee extract (optional)


Instructions

  1. In a medium pot, warm the milk on medium heat until it starts to release steam (avoid boiling).
  2. In a separate bowl, blend the sugar, cornstarch, salt, and egg yolks until the mixture is smooth and light in color.
  3. Gradually add approximately ½ cup of the warm milk to the egg mixture, stirring continuously to gently heat the eggs.
  4. Pour the warmed egg blend back into the pot and continue cooking on medium heat, stirring nonstop, until it thickens to a consistency similar to pudding, which takes about 2 to 3 minutes.
  5. Take the pot off the heat and mix in the chopped dark chocolate, butter, and vanilla extract (along with coffee extract, if chosen), stirring until the mixture is uniformly smooth.
  6. Move the chocolate cream to a bowl and place plastic wrap directly against its surface to stop a skin from forming.
  7. Chill in the fridge until it is completely cold before using, which will take 2 to 3 hours. Stir again before serving to restore its creamy texture.
