Ingredients
- 2 cups (480 ml) whole milk
- ½ cup (100 g) sugar
- ¼ cup (30 g) cornstarch
- 1/4 teaspoon (1 ml) salt
- 4 large egg yolks
- 4 ounces (113 g) dark chocolate, finely chopped
- 2 tablespoons (28 g) unsalted butter, cut into ½-inch cubes
- 2 teaspoons (10 ml) vanilla extract
- 1 tablespoon (15 ml) coffee extract (optional)
Instructions
- In a medium pot, warm the milk on medium heat until it starts to release steam (avoid boiling).
- In a separate bowl, blend the sugar, cornstarch, salt, and egg yolks until the mixture is smooth and light in color.
- Gradually add approximately ½ cup of the warm milk to the egg mixture, stirring continuously to gently heat the eggs.
- Pour the warmed egg blend back into the pot and continue cooking on medium heat, stirring nonstop, until it thickens to a consistency similar to pudding, which takes about 2 to 3 minutes.
- Take the pot off the heat and mix in the chopped dark chocolate, butter, and vanilla extract (along with coffee extract, if chosen), stirring until the mixture is uniformly smooth.
- Move the chocolate cream to a bowl and place plastic wrap directly against its surface to stop a skin from forming.
- Chill in the fridge until it is completely cold before using, which will take 2 to 3 hours. Stir again before serving to restore its creamy texture.
