Ingredients
- – 1 to 1 1/2 lbs. (450-680 g) boneless chicken breasts sliced lengthwise into 4 to 6 pieces
- – 1 10 oz. (284 g) can Cream of Chicken and Mushroom
- – 1 cup (240 ml) mixed vegetables
- – 1 cup (240 ml) uncooked Jasmine or long grain rice
- – 2 cups (480 ml) water
- – 1/4 envelope French onion dip mix
- – 1/2 teaspoon (3 ml) sea salt
- – 1 cup (120 g) shredded sharp cheddar cheese
Instructions
- Set your oven to 375°F to preheat.
- Sprinkle a bit of sea salt on the chicken slices and let them rest for 10 minutes.
- In a large mixing bowl, combine the Cream of Chicken and Mushroom with water and the French onion dip mix. Stir until well blended.
- Add the uncooked rice and mixed vegetables to the mixture, and gently stir until everything is evenly distributed.
- Transfer the rice and vegetable mixture into a baking dish, then arrange the chicken pieces on top. Place the dish in the oven and cook for 30 minutes.
- Take the dish out of the oven and carefully stir the rice mixture to ensure even cooking. Return it to the oven and bake for another 20 to 30 minutes, or until the rice is almost cooked.
- Remove the dish from the oven and sprinkle the shredded sharp cheddar cheese over the top.
- Place it back in the oven for an additional 5 minutes, or until the cheese is melted.
- Take the dish out of the oven and it’s ready to serve. Enjoy sharing this dish!
