Ingredients
- 1 (900 to 1360 g) whole chicken
- 2 cups (240 g) all-purpose flour
- 1 tsp (5 ml) baking powder
- 1 cup (240 ml) hot chicken broth
- 1 egg
Instructions
- In a large pot, submerge the chicken in salted water and heat until it is thoroughly cooked and tender. Once done, take the chicken out and remove the meat from the bones, keeping it warm while you prepare the dumplings.
- For the dumplings, sift approximately 2 cups of flour along with 1 teaspoon of baking powder into a big bowl. Create a hollow in the flour and pour 1 cup of hot chicken broth into it. Start mixing with a fork, then use your fingers. Incorporate the egg and blend everything well.
- On a floured surface, knead the dough briefly. Divide it into 4 or 5 sections and roll each as thinly as you can. Cut into strips about 1 1/2 to 2 inches wide and then into pieces 2 inches long. Add these pieces to the boiling chicken broth and let them cook for 10 to 15 minutes. Pair with the warm chicken you prepared earlier.
Notes
- For a lighter texture, try using cake flour in the dumplings.
- Consider enhancing the flavor with herbs or spices like thyme or garlic powder in the dumpling dough.
- For a more flavorful broth, use homemade chicken stock instead of hot chicken broth.
