Ingredients

  • 2 cups (475 ml) cubed potatoes
  • 1 cup (240 ml) diced carrots
  • 1 cup (240 ml) diced celery
  • 1 cup (240 ml) minced onion
  • 3 cans minced clams, drained with juice reserved
  • water to cover
  • 75 cup (180 ml) vegetable oil
  • 75 cup (90 g) all-purpose flour
  • 1 quart (950 ml) milk
  • 2 tablespoons (30 ml) apple cider vinegar
  • 5 teaspoons (8 ml) salt
  • ground black pepper to taste


Instructions

  1. Put the potatoes, carrots, celery, and onion in a big pan. Add the clam juice and pour in just enough water to cover the vegetables. Cook over medium-low heat, stirring occasionally, until the vegetables are soft.
  2. At the same time, heat the vegetable oil in a large, sturdy pot over medium heat. Add the flour, mixing it in until you achieve a smooth consistency. Gradually mix in the milk, stirring constantly, until it becomes thick and smooth.
  3. Combine the cooked vegetables and their liquid into the milk mixture, heating gently until just warmed through.
  4. Add the clams right before serving to avoid overcooking them. Once they are warmed, mix in the apple cider vinegar and adjust the seasoning with salt and ground black pepper to your taste.
