Ingredients

  • ¼ cup (57 g) butter, melted
  • 1 ½ cups (354 g) milk
  • 1 teaspoon lemon juice
  • 2 large eggs
  • 3 tablespoons white sugar
  • 3 tablespoons light brown sugar
  • 2 ½ cups (300 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1 cup (240 g) heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon


Instructions

  1. To make the Cinnamon Whipped Cream, combine the cream, powdered sugar, vanilla extract, and ground cinnamon in a mixing bowl.
  2. Use an electric mixer to whip the mixture until stiff peaks form. Refrigerate until ready to serve.
  3. Preheat your waffle iron on the highest setting.
  4. In a large bowl, whisk together the melted butter, milk, lemon juice, eggs, and vanilla extract until well blended.
  5. Add the white sugar, brown sugar, all-purpose flour, baking powder, baking soda, salt, and ground cinnamon; whisk until the batter is smooth and free of lumps.
  6. Lightly brush the waffle iron with melted butter, then pour in enough batter to reach the edges without overfilling.
  7. Close the waffle iron and cook for 3-5 minutes, or until golden and crisp.
  8. Carefully remove the waffles and serve hot, topped with the cinnamon whipped cream.
