Description

A playful twist on classic French toast, these cinnamon sugar roll-ups are perfect for weekend brunch, combining the joy of warm bread with a sweet and creamy filling.


Ingredients

  • 10-12 slices of bread (white or brioche)
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/4 cup light brown sugar
  • 3 teaspoons ground cinnamon
  • 2 large eggs
  • 3 tablespoons milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter (for cooking)
  • Additional butter as needed for frying
  • Powdered sugar (optional, for dusting)


Instructions

  1. Combine the softened butter, brown sugar, and 3 teaspoons of cinnamon in a small bowl until smooth.
  2. Mix the granulated sugar and 1 teaspoon of cinnamon in another bowl and set aside.
  3. Whisk together the eggs and milk in a shallow bowl.
  4. Trim the crusts from the bread slices and flatten each with a rolling pin to about 1/8 inch thickness.
  5. Spread a layer of cinnamon butter evenly over each slice.
  6. Roll up the bread tightly from one end and secure the seam with a dab of cinnamon butter if necessary.
  7. Heat a non-stick pan over medium heat with about 1 tablespoon of butter.
  8. Dip each roll-up in the egg mixture, ensuring they are well-coated.
  9. Place the rolls seam-side down in the pan, cooking in batches of 3-4 to avoid overcrowding.
  10. Cook for 2-3 minutes on each side until golden brown.
  11. Coat the cooked roll-ups in the cinnamon-sugar mixture and serve warm.

Notes

For an extra flavor boost, consider adding vanilla extract to the filling or experimenting with different types of bread.
