Description

Delightful cinnamon roll pancakes combine the comfort of cinnamon rolls with the ease of pancakes, perfect for a memorable brunch.


Ingredients

  • 1 cup Flour (can use gluten-free flour blend)
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Milk (any non-dairy milk works well)
  • 1 large Egg (or flax egg for vegan)
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Melted Butter
  • 1/4 cup Brown Sugar
  • 1 tablespoon Ground Cinnamon
  • 4 ounces Cream Cheese
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Melted Butter (for icing)


Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, brown sugar, and ground cinnamon.
  2. In a separate bowl, combine the milk, egg, vegetable oil, and two tablespoons of melted butter.
  3. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. Preheat a skillet over medium heat and lightly grease it with butter or oil.
  5. Pour about a 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface.
  6. Flip and cook until golden brown on both sides. Repeat with the remaining batter.
  7. For the cream cheese icing, beat together the cream cheese, powdered sugar, vanilla extract, and remaining melted butter until smooth.
  8. Serve pancakes warm, drizzling with cream cheese icing.

Notes

Use a measuring cup for consistent pancake sizes. Adjust sweetness of icing as desired.
