Delightful cinnamon roll pancakes combine the comfort of cinnamon rolls with the ease of pancakes, perfect for a memorable brunch.
Ingredients
- 1 cup Flour (can use gluten-free flour blend)
- 2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup Milk (any non-dairy milk works well)
- 1 large Egg (or flax egg for vegan)
- 2 tablespoons Vegetable Oil
- 2 tablespoons Melted Butter
- 1/4 cup Brown Sugar
- 1 tablespoon Ground Cinnamon
- 4 ounces Cream Cheese
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 2 tablespoons Melted Butter (for icing)
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, brown sugar, and ground cinnamon.
- In a separate bowl, combine the milk, egg, vegetable oil, and two tablespoons of melted butter.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Preheat a skillet over medium heat and lightly grease it with butter or oil.
- Pour about a 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface.
- Flip and cook until golden brown on both sides. Repeat with the remaining batter.
- For the cream cheese icing, beat together the cream cheese, powdered sugar, vanilla extract, and remaining melted butter until smooth.
- Serve pancakes warm, drizzling with cream cheese icing.
Notes
Use a measuring cup for consistent pancake sizes. Adjust sweetness of icing as desired.
