Ingredients
- 2 pounds (907 g) boneless chicken breasts
- 2 tablespoons (30 ml) vegetable oil for the marinade, plus more for grilling
- Grated zest from 2 limes
- Juice from 2 limes (about 60 ml)
- 3 tablespoons (45 g) chopped cilantro
- 1/2 teaspoon (3 ml) sugar
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- Lime wedges, fresh sprigs of cilantro, and slices of avocado, to serve
Instructions
- Position the chicken breasts between two sheets of plastic wrap or wax paper and use a meat mallet or rolling pin to flatten them evenly.
- In a large bowl, combine the vegetable oil, lime zest, lime juice, cilantro, sugar, salt, and pepper. Add the chicken, ensuring the marinade thoroughly coats the meat. Cover and refrigerate the mixture for no less than 30 minutes, but up to 4 hours or overnight.
- Prepare your grill, whether gas or charcoal, to medium-high heat, ensuring it’s hot enough to hold your hand an inch above the grates for just 1 second.
- Take the chicken out of the fridge. Remove it from the marinade and use paper towels to dry it off. Lightly brush the chicken breasts with vegetable oil. Dip a paper towel in additional oil and, using tongs, rub it over the grill grates. Once the grill is ready, place the chicken on it. Cook each side for a few minutes until fully done.
