Ingredients

- – 1/2 teaspoon (2.5 ml) salt
- – 2 Tablespoons (30 ml) vegetable oil, plus more for frying
- – 1 cup (120 g) all-purpose flour
- – 3 1/2 ounces (100 g) dark chocolate, chopped
- – 1/2 cup (120 ml) heavy cream
- – a deep-fry thermometer; a cloth pastry bag or heavy-duty plastic pastry bag; a large star pastry tip (such as Wilton #2110; optional)
Instructions
- In a shallow dish, combine the cinnamon with the sugar thoroughly.
- In a saucepan on medium heat, combine water, sugar, salt, and vegetable oil. Allow the mixture to reach a boil, then take it off the heat. Add the flour, stirring until you achieve a smooth dough.
- In a large pot, heat 3 to 4 inches of vegetable oil on medium-high heat until it reaches 375ºF. Ensure there’s at least 3 inches of space above the oil to prevent overflow. Prepare a plate with paper towels.
- Put the dough into a cloth or heavy-duty plastic pastry bag with an optional large star tip.
- Carefully pipe the dough over the oil to about a 4-inch length, and cut it with scissors or a knife to drop into the oil. Be cautious of any splashes. Fry two to three churros at a time until they are golden and cooked through.
- Move the churros onto the paper towel-lined plate to drain for 2 minutes, then coat them in the cinnamon-sugar mix while still hot. Repeat frying and coating with the remaining dough.
- Place the chopped chocolate into a small bowl.
- Gently heat the heavy cream in a saucepan without boiling it. Pour it over the chocolate and let it sit for 1 minute before stirring until smooth.
- Using a cloth or heavy-duty plastic pastry bag is crucial, as a regular plastic bag may burst when piping the dough.
- The chocolate sauce will become thicker as it cools, so prepare it just before serving with the churros.
- A large star-shaped pastry tip is not necessary but will create the traditional ridged appearance of churros.
