Ingredients

  • – 1/2 cup (120 ml) white sugar
  • – 1 1/2 teaspoons (7.5 ml) ground cinnamon
  • – 1 1/2 Tablespoons (22.5 ml) white sugar
  • – 1 cup (240 ml) water
  • – 1/2 teaspoon (2.5 ml) salt
  • – 2 Tablespoons (30 ml) vegetable oil, plus more for frying
  • – 1 cup (120 g) all-purpose flour
  • – 3 1/2 ounces (100 g) dark chocolate, chopped
  • – 1/2 cup (120 ml) heavy cream
  • – a deep-fry thermometer; a cloth pastry bag or heavy-duty plastic pastry bag; a large star pastry tip (such as Wilton #2110; optional)


Instructions

  1. In a shallow dish, combine the cinnamon with the sugar thoroughly.
  2. In a saucepan on medium heat, combine water, sugar, salt, and vegetable oil. Allow the mixture to reach a boil, then take it off the heat. Add the flour, stirring until you achieve a smooth dough.
  3. In a large pot, heat 3 to 4 inches of vegetable oil on medium-high heat until it reaches 375ºF. Ensure there’s at least 3 inches of space above the oil to prevent overflow. Prepare a plate with paper towels.
  4. Put the dough into a cloth or heavy-duty plastic pastry bag with an optional large star tip.
  5. Carefully pipe the dough over the oil to about a 4-inch length, and cut it with scissors or a knife to drop into the oil. Be cautious of any splashes. Fry two to three churros at a time until they are golden and cooked through.
  6. Move the churros onto the paper towel-lined plate to drain for 2 minutes, then coat them in the cinnamon-sugar mix while still hot. Repeat frying and coating with the remaining dough.
  7. Place the chopped chocolate into a small bowl.
  8. Gently heat the heavy cream in a saucepan without boiling it. Pour it over the chocolate and let it sit for 1 minute before stirring until smooth.
  9. Using a cloth or heavy-duty plastic pastry bag is crucial, as a regular plastic bag may burst when piping the dough.
  10. The chocolate sauce will become thicker as it cools, so prepare it just before serving with the churros.
  11. A large star-shaped pastry tip is not necessary but will create the traditional ridged appearance of churros.
