Description

A moist and flavorful loaf that combines zucchini and chocolate, creating a delightful balance of sweetness and spice.


Ingredients

  • 2 cups granulated sugar
  • 3 large eggs (room temperature)
  • 1 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups grated zucchini
  • 12 oz semi-sweet chocolate chips (8 oz for batter, 4 oz for topping)


Instructions

  1. Preheat the oven to 350ºF. Prepare two loaf tins with baking spray or grease and flour them.
  2. Whisk together the granulated sugar, eggs, vegetable oil, and vanilla extract in a large bowl.
  3. Add the flour, cocoa powder, salt, baking powder, baking soda, ground cinnamon, and nutmeg. Mix until just combined.
  4. Fold in the grated zucchini and 8 ounces of chocolate chips.
  5. Divide the batter equally between the prepared loaf tins. Sprinkle the remaining chocolate chips on top.
  6. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  7. Cool in the pans for 5-10 minutes before transferring to cooling racks.

Notes

For extra flavor, consider adding chopped nuts or experimenting with different types of chocolate chips.
