A moist and flavorful loaf that combines zucchini and chocolate, creating a delightful balance of sweetness and spice.
Ingredients
- 2 cups granulated sugar
- 3 large eggs (room temperature)
- 1 cup vegetable oil
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups grated zucchini
- 12 oz semi-sweet chocolate chips (8 oz for batter, 4 oz for topping)
Instructions
- Preheat the oven to 350ºF. Prepare two loaf tins with baking spray or grease and flour them.
- Whisk together the granulated sugar, eggs, vegetable oil, and vanilla extract in a large bowl.
- Add the flour, cocoa powder, salt, baking powder, baking soda, ground cinnamon, and nutmeg. Mix until just combined.
- Fold in the grated zucchini and 8 ounces of chocolate chips.
- Divide the batter equally between the prepared loaf tins. Sprinkle the remaining chocolate chips on top.
- Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pans for 5-10 minutes before transferring to cooling racks.
Notes
For extra flavor, consider adding chopped nuts or experimenting with different types of chocolate chips.
