Description

Delicious clusters of diced strawberries coated in creamy Greek yogurt and rich chocolate, perfect for a refreshing snack or dessert.


Ingredients

  • 1 cup strawberries, diced (stems removed)
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 2 tsp coconut oil


Instructions

  1. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the diced strawberries, Greek yogurt, and vanilla extract; stir until the strawberries are well coated.
  3. Scoop the strawberry-yogurt mixture onto the lined baking sheet in clusters of about 2 tablespoons each, leaving space between clusters.
  4. Freeze the clusters for 30-45 minutes.
  5. In the last 10 minutes, melt the chocolate chips and coconut oil together in the microwave in 30-second increments, stirring until smooth.
  6. Remove the frozen clusters from the freezer and dip each cluster into the melted chocolate, then place them back on the baking sheet.
  7. Allow the chocolate to harden for a few minutes before serving.

Notes

Use fresh, ripe strawberries for the best flavor. Full-fat Greek yogurt will provide a creamier texture.
