Description
Delicious clusters of diced strawberries coated in creamy Greek yogurt and rich chocolate, perfect for a refreshing snack or dessert.
Ingredients
- 1 cup strawberries, diced (stems removed)
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla extract
- 1 cup semisweet chocolate chips
- 2 tsp coconut oil
Instructions
- Line a large baking sheet with parchment paper.
- In a large bowl, combine the diced strawberries, Greek yogurt, and vanilla extract; stir until the strawberries are well coated.
- Scoop the strawberry-yogurt mixture onto the lined baking sheet in clusters of about 2 tablespoons each, leaving space between clusters.
- Freeze the clusters for 30-45 minutes.
- In the last 10 minutes, melt the chocolate chips and coconut oil together in the microwave in 30-second increments, stirring until smooth.
- Remove the frozen clusters from the freezer and dip each cluster into the melted chocolate, then place them back on the baking sheet.
- Allow the chocolate to harden for a few minutes before serving.
Notes
Use fresh, ripe strawberries for the best flavor. Full-fat Greek yogurt will provide a creamier texture.
