Ingredients
- 3 very ripe bananas
- 2 large handfuls baby spinach
- 3 tablespoons milk (almond milk or regular)
- 1 egg
- ½ cup sugar
- 1 teaspoon vanilla
- ½ cup Greek yogurt (full fat)
- 3 tablespoons oil
- 1 cup white whole wheat flour
- 1 teaspoon baking soda

- ÂĽ teaspoon sea salt
- ½ cup dark chocolate chips
Instructions
- Combine milk, very ripe bananas, and baby spinach in a high-powered blender and blend until mostly smooth.
- Transfer the mixture into a large mixing bowl.
- Add the egg and stir to lightly whisk.
- Incorporate sugar, vanilla, oil, and Greek yogurt, stirring to combine.
- Mix flour, baking soda, sea salt, and cocoa powder in a separate bowl.
- Slowly add the dry mixture to the wet one and fold gently until combined.
- Fold in the dark chocolate chips.
- Line a 12-cup muffin pan with muffin liners.
- Spoon the batter into each cup, filling them about two-thirds full.
- Bake for about 18-22 minutes or until a toothpick comes out clean.
- Allow to cool for several minutes before serving.
Notes
For extra fluffiness, separate the egg and whisk the white before folding it into the batter. Use high-quality chocolate for the best flavor.
