Description

Delicious and nutritious chocolate muffins with a hidden twist of spinach, perfect for any time of the day.


Ingredients

  • 3 very ripe bananas
  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond milk or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • â…” cup cocoa powder
  • ÂĽ teaspoon sea salt
  • ½ cup dark chocolate chips


Instructions

  1. Combine milk, very ripe bananas, and baby spinach in a high-powered blender and blend until mostly smooth.
  2. Transfer the mixture into a large mixing bowl.
  3. Add the egg and stir to lightly whisk.
  4. Incorporate sugar, vanilla, oil, and Greek yogurt, stirring to combine.
  5. Mix flour, baking soda, sea salt, and cocoa powder in a separate bowl.
  6. Slowly add the dry mixture to the wet one and fold gently until combined.
  7. Fold in the dark chocolate chips.
  8. Line a 12-cup muffin pan with muffin liners.
  9. Spoon the batter into each cup, filling them about two-thirds full.
  10. Bake for about 18-22 minutes or until a toothpick comes out clean.
  11. Allow to cool for several minutes before serving.

Notes

For extra fluffiness, separate the egg and whisk the white before folding it into the batter. Use high-quality chocolate for the best flavor.
