Ingredients
- 1 cup raw cashews (soaked)
- 1/2 cup unsweetened shredded coconut
- 1/4 cup vanilla or mint-flavored protein powder
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon peppermint extract
- 2-3 tablespoons almond milk
- 1-2 drops green food coloring (optional)
- 1 cup dark chocolate chips (or chopped dark chocolate)
- 1 teaspoon coconut oil (optional)
- Crushed chocolate or mint chocolate chips (optional, for garnish)
Instructions
- Combine soaked cashews, shredded coconut, protein powder, maple syrup, and peppermint extract in a food processor.
- Blend until smooth, adding almond milk gradually until you achieve a dough-like consistency.
- If desired, blend in green food coloring to achieve a vibrant hue.
- Roll the mixture into 1-tablespoon balls and place them on a parchment-lined baking sheet.
- Freeze for 15-20 minutes to firm up the bites.
- Melt the chocolate chips and coconut oil, if using.
- Dip each mint ball into the melted chocolate, ensuring full coverage.
- Sprinkle with crushed chocolate or mint chips, if desired.
- Refrigerate for 15-30 minutes until firm.
