Description

Delicious and healthy Chocolate Mint Protein Bites made from cashews, coconut, and protein powder, coated in dark chocolate for a satisfying snack.


Ingredients

  • 1 cup raw cashews (soaked)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup vanilla or mint-flavored protein powder
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon peppermint extract
  • 2-3 tablespoons almond milk
  • 1-2 drops green food coloring (optional)
  • 1 cup dark chocolate chips (or chopped dark chocolate)
  • 1 teaspoon coconut oil (optional)
  • Crushed chocolate or mint chocolate chips (optional, for garnish)


Instructions

  1. Combine soaked cashews, shredded coconut, protein powder, maple syrup, and peppermint extract in a food processor.
  2. Blend until smooth, adding almond milk gradually until you achieve a dough-like consistency.
  3. If desired, blend in green food coloring to achieve a vibrant hue.
  4. Roll the mixture into 1-tablespoon balls and place them on a parchment-lined baking sheet.
  5. Freeze for 15-20 minutes to firm up the bites.
  6. Melt the chocolate chips and coconut oil, if using.
  7. Dip each mint ball into the melted chocolate, ensuring full coverage.
  8. Sprinkle with crushed chocolate or mint chips, if desired.
  9. Refrigerate for 15-30 minutes until firm.
