Ingredients
- 6 oz (170 g) semisweet chocolate, finely chopped
- 1/2 cup (113 g) butter, cut into 8 pieces
- 3 eggs, room temperature
- 1/3 cup (67 g) white sugar
- 2 tbsp (15 g) all-purpose flour
- 4 tsp (8 g) unsweetened cocoa powder
- 1 pinch salt
Instructions
- Begin by heating your oven to 400 degrees F (200 degrees C). Prepare four 6-ounce ramekins by greasing them and dusting with flour.
- In a double boiler over gently simmering water, place the chocolate and butter. Stir often with a rubber spatula, making sure to scrape the sides to prevent burning, until the chocolate is fully melted, which should take around 5 minutes.
- In a large mixing bowl, combine the eggs and sugar. Use an electric mixer to beat them until the mixture becomes pale and thick, approximately 5 minutes. Add in the melted chocolate, flour, cocoa powder, and a pinch of salt, stirring everything together until well mixed. Divide the batter between the prepared ramekins and arrange them on a baking sheet.
- Transfer to the preheated oven and bake until the edges are firm but the center remains soft and slightly wobbly, about 10 to 13 minutes. Allow them to cool for 5 minutes prior to serving.
Notes
- Ensure that the eggs are at room temperature to achieve a light and fluffy texture.
- Avoid overmixing the batter after adding dry ingredients to prevent a dense final product.
- Monitor the lava cakes closely towards the end of baking to maintain their gooey centers; serve immediately for the best experience.
