Deliciously crispy Southwest eggrolls filled with seasoned chicken, black beans, corn, and Monterey Jack cheese, perfect for sharing.
Ingredients
- 1 cup seasoned chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1/2 cup diced peppers
- 1/2 cup diced onions
- 1 cup shredded Monterey Jack cheese
- 10 eggroll wrappers
- Oil for frying
- Avocado ranch sauce for dipping
Instructions
- Combine the seasoned chicken, black beans, corn, diced peppers, onions, and shredded Monterey Jack cheese in a large bowl.
- Lay out an eggroll wrapper and place a spoonful of the filling in the center.
- Fold the sides over the filling and roll tightly to seal.
- Heat oil in a deep fryer or large pan over medium heat.
- Fry the eggrolls until golden brown and crispy, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve warm with creamy avocado ranch sauce.
Notes
For a healthier option, consider pan-frying instead of deep-frying. Chill the assembled eggrolls for 15-20 minutes before frying to maintain their shape.
