Description

Deliciously crispy Southwest eggrolls filled with seasoned chicken, black beans, corn, and Monterey Jack cheese, perfect for sharing.


Ingredients

  • 1 cup seasoned chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup diced peppers
  • 1/2 cup diced onions
  • 1 cup shredded Monterey Jack cheese
  • 10 eggroll wrappers
  • Oil for frying
  • Avocado ranch sauce for dipping


Instructions

  1. Combine the seasoned chicken, black beans, corn, diced peppers, onions, and shredded Monterey Jack cheese in a large bowl.
  2. Lay out an eggroll wrapper and place a spoonful of the filling in the center.
  3. Fold the sides over the filling and roll tightly to seal.
  4. Heat oil in a deep fryer or large pan over medium heat.
  5. Fry the eggrolls until golden brown and crispy, about 3-4 minutes on each side.
  6. Remove and drain on paper towels.
  7. Serve warm with creamy avocado ranch sauce.

Notes

For a healthier option, consider pan-frying instead of deep-frying. Chill the assembled eggrolls for 15-20 minutes before frying to maintain their shape.
