Description

A delightful sandwich featuring creamy avocado and protein-rich chickpeas, perfect for a quick and nourishing meal.


Ingredients

  • 2 cans chickpeas
  • 2-3 avocados
  • Juice from 1 1/2 limes
  • 1/2 cup chopped green onions (about 4 stalks)
  • 1/2 cup chopped celery (about 2 stalks)
  • 1/2 cup chopped cilantro
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp salt
  • 1/2 tsp dill
  • 1/4 tsp pepper
  • Toppings of choice (tomato, greens, onion)
  • Vegan bread


Instructions

  1. Rinse the chickpeas and add them to a mixing bowl with all other filling ingredients.
  2. Squish the mixture gently with a potato masher until well combined, leaving some chickpeas whole for texture.
