Ingredients
- 1-2 tablespoons (15-30 ml) olive oil
- 1 ¼ lbs. (567 g) beef, see notes
- Salt/Pepper
- 2 tablespoons (28 g) vegetable oil
- 1 small yellow onion, diced
- ¾ cup (180 ml) carrots, diced
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 1 teaspoon (5 ml) hot sauce
- 1 teaspoon (5 ml) Worcestershire sauce
- 7 cups (1.65 liters) chicken broth
- 1 ½ cups (225 g) frozen mixed vegetables, (corn/green beans)
- 1 teaspoon (5 ml) dried parsley
- ½ teaspoon (2.5 ml) EACH: Dried basil, oregano, mustard powder
- ¼ teaspoon (1.25 ml) pepper
Instructions
- Pat dry the beef and sprinkle with salt and pepper. Warm up the vegetable oil in a 4.5-quart pot on medium-high heat. Place the beef in the pot and brown for approximately 3 minutes on each side until a golden crust forms. (It’s fine if the center is not fully cooked; it will complete cooking while simmering in the soup later.)
- Take the beef out and set it aside. Allow it to rest for 10 minutes, then chop or shred it.
- In the same pot, heat olive oil over medium heat. Use a silicone spatula to scrape the bottom and sides, incorporating the brown bits into the broth for extra flavor.
- Add the diced onion, carrots, and celery to the pot and cook until soft, about 5 minutes.
- Incorporate the minced garlic, hot sauce, Worcestershire sauce, and spices. Stir everything together.
- Pour in the chicken broth and bring the mixture to a boil. Lower the heat to a simmer, return the beef to the pot along with any accumulated juices, and let it cook, uncovered, for 15 minutes.
- Introduce the frozen mixed vegetables to the soup. Partially cover the pot and let it simmer for an additional 10-15 minutes. Enjoy!
