Ingredients
- 25 cup (60 ml) olive oil
- 2 cloves garlic, minced
- 2 tablespoon (30 ml) s lemon juice
- 1 teaspoon (5 ml) dried oregano
- 5 teaspoon (3 ml) salt
- 5 pounds (680 g) skinless, boneless chicken breast halves – cut into bite-sized pieces
- 6 wooden skewers, or as needed
- 1 (6 ounce (170 g)) container plain Greek-style yogurt
- 5 cucumber – peeled, seeded, and grated
- 1 tablespoon (15 ml) olive oil
- 2 teaspoon (10 ml) s white vinegar
- 1 clove garlic, minced
- 1 pinch salt
Instructions
- Collect all necessary items.
- For the kabobs: In a large resealable bag, combine the olive oil, minced garlic, lemon juice, oregano, and salt. Add the chicken pieces, ensuring they are well-coated in the mixture, remove any extra air, and close the bag. Let it marinate in the fridge for 2 hours.
- To make the sauce: In a bowl, blend together the yogurt, grated cucumber, olive oil, vinegar, minced garlic, and a pinch of salt. Chill the sauce in the refrigerator for a minimum of 1 to 2 hours to allow the flavors to meld.
- Immerse the wooden skewers in a bowl of cold water for around 15 minutes. Heat up an outdoor grill to medium-high and slightly grease the grill surface.
- Take the chicken out of the marinade and place onto the soaked skewers. Dispose of any left-over marinade.
- Grill the chicken skewers, turning them regularly, until they are browned all over and the chicken is cooked through, roughly 7 to 8 minutes each side.
- Pair with the prepared tzatziki sauce. Enjoy your meal!
