Ingredients

  • 25 cup (60 ml) olive oil
  • 2 cloves garlic, minced
  • 2 tablespoon (30 ml) s lemon juice
  • 1 teaspoon (5 ml) dried oregano
  • 5 teaspoon (3 ml) salt
  • 5 pounds (680 g) skinless, boneless chicken breast halves – cut into bite-sized pieces
  • 6 wooden skewers, or as needed
  • 1 (6 ounce (170 g)) container plain Greek-style yogurt
  • 5 cucumber – peeled, seeded, and grated
  • 1 tablespoon (15 ml) olive oil
  • 2 teaspoon (10 ml) s white vinegar
  • 1 clove garlic, minced
  • 1 pinch salt


Instructions

  1. Collect all necessary items.
  2. For the kabobs: In a large resealable bag, combine the olive oil, minced garlic, lemon juice, oregano, and salt. Add the chicken pieces, ensuring they are well-coated in the mixture, remove any extra air, and close the bag. Let it marinate in the fridge for 2 hours.
  3. To make the sauce: In a bowl, blend together the yogurt, grated cucumber, olive oil, vinegar, minced garlic, and a pinch of salt. Chill the sauce in the refrigerator for a minimum of 1 to 2 hours to allow the flavors to meld.
  4. Immerse the wooden skewers in a bowl of cold water for around 15 minutes. Heat up an outdoor grill to medium-high and slightly grease the grill surface.
  5. Take the chicken out of the marinade and place onto the soaked skewers. Dispose of any left-over marinade.
  6. Grill the chicken skewers, turning them regularly, until they are browned all over and the chicken is cooked through, roughly 7 to 8 minutes each side.
  7. Pair with the prepared tzatziki sauce. Enjoy your meal!
