Description

A heartwarming chicken soup recipe filled with colorful vegetables, perfect for nourishing both body and soul.


Ingredients

  • 1 pound of chicken (thighs or breasts)
  • 4 cups of chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup of green beans, trimmed
  • 1 zucchini, diced
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large stockpot over medium heat.
  2. Add diced onions, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the chicken to the pot, followed by chicken broth, thyme, oregano, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 20-25 minutes.
  6. Remove the chicken, shred it with two forks, and return it to the pot.
  7. Add green beans and zucchini. Cook for an additional 10-15 minutes until tender.
  8. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.

Notes

For a creamier texture, add a splash of cream or coconut milk near the end of cooking. Letting the soup sit overnight can enhance the flavors.
