Ingredients
- 1 pound of chicken (thighs or breasts)
- 4 cups of chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup of green beans, trimmed
- 1 zucchini, diced
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large stockpot over medium heat.
- Add diced onions, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the chicken to the pot, followed by chicken broth, thyme, oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 20-25 minutes.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Add green beans and zucchini. Cook for an additional 10-15 minutes until tender.
- Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
Notes
For a creamier texture, add a splash of cream or coconut milk near the end of cooking. Letting the soup sit overnight can enhance the flavors.
