Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup rice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery, and sauté for about five minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the cooked chicken and rice, then lower the heat and simmer for about 20 minutes.
