Description

A warm and comforting Chicken & Rice Soup, perfect for cozy nights or family gatherings, featuring tender chicken, rice, and a medley of vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup rice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery, and sauté for about five minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring to a boil.
