Ingredients
- – 9 oz (255 g) ramen noodles
- – 2 tbsp (30 ml) unsalted butter
- – 2 chicken breasts (sliced thin)
- – 1/2 tsp (2.5 ml) pepper (or to taste)
- – 1 red bell pepper (sliced)
- – 4 cloves garlic (minced)
- – 2 cup (470 ml) napa cabbage (shredded)
- – 1/2 cup (120 ml) green onion (sliced)
- – sesame seeds (optional, for garnish)
- – 1/4 cup (60 ml) soy sauce
- – 1 tsp (5 ml) sesame oil
- – 2 tbsp (30 ml) vegetarian mushroom sauce
- – 1 tbsp (15 ml) honey
- – 2 tbsp (30 ml) chili sauce
Instructions
- Prepare the ramen: Follow the directions on the package, saving a cup of the cooking liquid.
- Make the sauce: In a small mixing bowl, combine soy sauce, vegetarian mushroom sauce, chili sauce, honey, and sesame oil. Mix thoroughly.
- Cook the chicken: In a large pan, melt the butter over medium heat, then add the thinly sliced chicken breast. Sprinkle with pepper and cook until browned, then turn and season with pepper again, cooking until fully done.
- Incorporate the vegetables: Add sliced red bell pepper and cook for 2-3 minutes, then add minced garlic and sauté until fragrant. Mix in the shredded napa cabbage and cook until wilted and slightly browned, about 2 more minutes.
- Complete the stir fry: Add the ramen noodles and prepared sauce to the pan, using some of the reserved cooking liquid to blend the sauce well. Stir in sliced green onions and cook for another minute. Garnish with sesame seeds and serve immediately.
