Description

A quick and flavorful Chicken and Ramen Stir Fry with vibrant vegetables and gluten-free noodles, perfect for busy days.


Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 packs gluten-free ramen noodles
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons coconut aminos
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the mixed vegetables, garlic, and ginger to the skillet and stir-fry for 3-4 minutes until the vegetables are tender.
  4. Meanwhile, cook the gluten-free ramen noodles according to package instructions, then drain.
  5. Add the cooked noodles to the skillet with the chicken and vegetables.
  6. Pour in the coconut aminos and toss everything together until evenly coated.
  7. Season with salt and pepper to taste.
  8. Serve warm.
