A quick and flavorful Chicken and Ramen Stir Fry with vibrant vegetables and gluten-free noodles, perfect for busy days.
Ingredients
- 1 pound chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 packs gluten-free ramen noodles
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons coconut aminos
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables, garlic, and ginger to the skillet and stir-fry for 3-4 minutes until the vegetables are tender.
- Meanwhile, cook the gluten-free ramen noodles according to package instructions, then drain.
- Add the cooked noodles to the skillet with the chicken and vegetables.
- Pour in the coconut aminos and toss everything together until evenly coated.
- Season with salt and pepper to taste.
- Serve warm.
