Description

A heartwarming chicken potato soup that’s perfect for cold days, featuring tender chicken, hearty potatoes, and fragrant herbs.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked bacon, crumbled
  • 1/4 cup chives, chopped
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onions and garlic, and sauté until translucent.
  3. Stir in the diced potatoes and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Once boiling, reduce heat and add in the shredded chicken.
  6. Simmer until the potatoes are tender.
  7. Stir in the heavy cream and cooked bacon.
  8. Season with salt and pepper, and garnish with chives before serving.

Notes

For best results, use freshly cooked chicken. Store leftovers in an airtight container for up to 3 days. Reheat with a splash of chicken broth if thickened.
