A heartwarming chicken potato soup that’s perfect for cold days, featuring tender chicken, hearty potatoes, and fragrant herbs.
Ingredients
- 2 cups cooked chicken, shredded
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cooked bacon, crumbled
- 1/4 cup chives, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onions and garlic, and sauté until translucent.
- Stir in the diced potatoes and cook for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Once boiling, reduce heat and add in the shredded chicken.
- Simmer until the potatoes are tender.
- Stir in the heavy cream and cooked bacon.
- Season with salt and pepper, and garnish with chives before serving.
Notes
For best results, use freshly cooked chicken. Store leftovers in an airtight container for up to 3 days. Reheat with a splash of chicken broth if thickened.
