Ingredients
- – 680g (1 1/2 lb) Chicken Breasts, thinly sliced against the grain
- – 1 Green Bell Pepper, sliced
- – 1 Red Bell Pepper, sliced
- – 1 White Onion, sliced
- – 1 tsp (5 ml) Italian Seasoning
- – 1/2 tsp (3 ml) Salt
- – 1/2 tsp (3 ml) Pepper
- – 8 slices Provolone Cheese
- – 4 Hoagie Rolls
- – 15 ml (1 Tbsp) Vegetable Oil
- – 15 ml (1 Tbsp) Ghee
Instructions
- Heat a large pan or flat cooktop to a medium-high temperature (around 400°F).
- Pour the vegetable oil and ghee into the center of the pan or griddle. Allow them to melt and spread evenly.
- Place the sliced bell peppers and onion in the pan. Stir them around to coat with the melted mixture. Cook for 3-5 minutes until they reach your desired tenderness.
- Transfer the cooked vegetables to a separate dish.
- Lay the chicken slices on the same pan or griddle. Spread them into a thin layer. Sprinkle with Italian seasoning, salt, and pepper. Sear for 3-5 minutes until the juices start to appear. Turn the chicken over and chop into smaller pieces with a spatula. Continue to cook until fully done, about 2-3 more minutes.
- Return the peppers and onions to the pan or griddle with the chicken. Layer the provolone cheese on top of the mixture. Cover with a lid, letting the cheese melt.
- Lightly toast the hoagie rolls.
- Use a spatula to transfer the cheesy chicken and vegetable blend onto each toasted roll.
- Serve immediately while hot and enjoy!
