Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 2 tablespoon (30 ml) s butter
  • 1/2 small onion chopped finely
  • 3 cloves garlic minced
  • 1/4 cup (60 ml) chicken broth
  • 1/4 cup (60 ml) tomato paste
  • 1/2 teaspoon (3 ml) Italian seasoning
  • 2 cup (480 ml) s chicken broth
  • 1 cup (240 ml) heavy/whipping cream
  • 1 cup (240 ml) uncooked orzo
  • 2 cup (480 ml) s cooked/rotisserie chicken
  • 1/2 cup (120 ml) freshly grated parmesan cheese
  • 1 handful fresh basil torn
  • Salt & pepper to taste


Instructions

  1. Heat the olive oil and butter in a Dutch oven or large pot on medium-high flame. Sauté the finely chopped onion for about 5 minutes.
  2. Add the minced garlic and let it cook for roughly 30 seconds.
  3. Introduce the chicken broth and allow it to simmer for half a minute.
  4. Mix in the tomato paste and the Italian seasoning.
  5. Pour in the chicken broth, heavy cream, and uncooked orzo. Turn up the heat to high. Stir well to make sure the tomato paste blends in completely. Once boiling, cook for 10 minutes without a lid, stirring frequently. Adjust the heat as necessary to maintain a gentle simmer, avoiding a rapid boil.
  6. Add the cooked chicken, freshly grated parmesan, and torn basil leaves. Remove the pot from the stove and cover it for 3-5 minutes, allowing the mixture to thicken to your preference. Season with salt and pepper to taste before serving.
