Ingredients
- 1/3 cup tomato sauce (80 ml)
- 2 Tablespoons (30 ml) packed light brown sugar
- 2 large eggs
- 1 1/2 cups breadcrumbs (150 g)
- 1 cup whole milk (240 ml)
- 3/4 cup freshly grated Parmesan cheese (75 g)
- 1 small yellow onion (finely diced, about 1/2 cup (120 ml))
- 1/4 cup tomato sauce (60 ml)
- 3 Tablespoons (45 ml) Worcestershire sauce
- 1 1/2 Tablespoons (23 ml) dried parsley
- 1 1/2 teaspoons (8 ml) garlic powder
- 1 1/2 teaspoons (8 ml) fine sea salt
- 1 teaspoon (5 ml) ground black pepper
- 2 pounds ground chicken (900 g)
- Freshly chopped parsley (optional, for garnish)
Instructions
- Heat your oven to 350 F (176 C). Cover a baking sheet with aluminum foil and lightly coat it with nonstick spray. Put it aside for later.
- In a small bowl, combine the tomato sauce and brown sugar until smooth to make the glaze. Reserve this mixture.
- In a large bowl, whisk the eggs until blended. Add breadcrumbs, milk, grated Parmesan, diced onion, additional tomato sauce, Worcestershire sauce, dried parsley, garlic powder, sea salt, and black pepper. Mix all these ingredients thoroughly.
- Introduce the ground chicken to the bowl, breaking it into pieces. Use your hands to incorporate the chicken into the mixture until well combined, ensuring not to overmix.
- Move the chicken mixture to the center of the prepared baking sheet and shape it into a loaf with your hands. Press the meat tightly to prevent it from falling apart during cooking, maintaining even height and thickness throughout.
- After forming the loaf, evenly coat the top and sides with the reserved glaze.
- Place the meatloaf in the preheated oven and bake for 50 minutes. Then, switch to the broiler setting and broil for an additional 3 minutes to caramelize the glaze. The meatloaf is ready when an instant-read thermometer in the thickest part shows 165 F.
- Allow the meatloaf to rest for 10 minutes before moving it to a serving platter. Garnish with chopped parsley if desired, and slice into 1”- 1 1/4” pieces. Serve with your choice of sides.

- For a more succulent meatloaf, opt for ground chicken with a slightly higher fat content.
