Ingredients
- – 3-4 boneless skinless chicken breasts (680-907g) – cooked and diced
- – 1 stalk of celery (about 50g) – chopped
- – 1/2 white onion (about 75g) – diced
- – 2 teaspoons (10 ml) minced garlic
- – 1/2 cup shredded carrots (about 75g)
- – 1 tablespoon (15 ml) vegetable oil
- – 4 cups low sodium chicken broth (about 946ml)
- – salt and pepper – to taste
- – 1 teaspoon (5 ml) thyme
- – 16 ounces potato gnocchi (about 454g)
- – 2 cups whole milk (about 473ml)
- – 1 cup fresh spinach (about 30g) – roughly chopped
Instructions
- Warm vegetable oil in a large saucepan over medium heat. Toss in the celery, onions, garlic, and carrots, and cook for 2-3 minutes until the onions are soft and clear.
- Incorporate the chicken, chicken broth, salt, pepper, and thyme, and let the mixture come to a rolling boil. Gently mix in the gnocchi. Continue boiling for an additional 3-4 minutes before lowering the heat to a simmer, allowing it to cook for another 10 minutes.
- Mix in the whole milk and spinach, cooking for an extra 1-2 minutes until the spinach becomes tender. Sample the soup, adjust the seasoning with salt and pepper if necessary, and serve.
Notes
- For a richer consistency, consider using half and half or heavy cream instead of whole milk.
- Add a dash of red pepper flakes for a subtle hint of heat in the soup.
- Customize the vegetables by incorporating your preferred choices like peas, bell peppers, or mushrooms.
