  • – 2 teaspoons (10 ml) minced garlic
  • – 1/2 cup shredded carrots (about 75g)
  • – 1 tablespoon (15 ml) vegetable oil
  • – 4 cups low sodium chicken broth (about 946ml)
  • – salt and pepper – to taste
  • – 1 teaspoon (5 ml) thyme
  • – 16 ounces potato gnocchi (about 454g)
  • – 2 cups whole milk (about 473ml)
  • – 1 cup fresh spinach (about 30g) – roughly chopped


Instructions

  1. Warm vegetable oil in a large saucepan over medium heat. Toss in the celery, onions, garlic, and carrots, and cook for 2-3 minutes until the onions are soft and clear.
  2. Incorporate the chicken, chicken broth, salt, pepper, and thyme, and let the mixture come to a rolling boil. Gently mix in the gnocchi. Continue boiling for an additional 3-4 minutes before lowering the heat to a simmer, allowing it to cook for another 10 minutes.
  3. Mix in the whole milk and spinach, cooking for an extra 1-2 minutes until the spinach becomes tender. Sample the soup, adjust the seasoning with salt and pepper if necessary, and serve.
