  • – 16 ounces (454g) potato gnocchi
  • – 2 cups (480ml) milk
  • – 1 cup (30g) fresh spinach – roughly chopped


Instructions

  1. Warm up vegetable oil in a large saucepan over medium heat. Toss in the chopped celery, diced onions, minced garlic, and shredded carrots, and cook for 2-3 minutes until the onions become see-through.
  2. Introduce the cooked and diced chicken, pour in the low-sodium chicken broth, season with salt, pepper, and thyme, and bring everything to a rolling boil. Gently incorporate the potato gnocchi, allowing it to boil for another 3-4 minutes, then lower the heat to a simmer and let it cook for 10 minutes.
  3. Add the milk and roughly chopped spinach, cooking for an additional 1-2 minutes until the spinach is soft. Sample the soup, adjust the seasoning with more salt and pepper if necessary, and serve hot.
