Ingredients
- – 3-4 (680-907g) boneless skinless chicken breasts – cooked and diced
- – 1 stalk of celery (about 40g) – chopped
- – ½ (75g) white onion – diced
- – 2 teaspoons (10 ml) minced garlic
- – ½ cup (120ml) shredded carrots
- – 1 tablespoon (15ml) vegetable oil
- – 4 cups (960ml) low sodium chicken broth
- – salt and pepper – to taste
- – 1 teaspoon (5 ml) thyme
- – 16 ounces (454g) potato gnocchi
- – 2 cups (480ml) milk
- – 1 cup (30g) fresh spinach – roughly chopped
Instructions
- Warm up vegetable oil in a large saucepan over medium heat. Toss in the chopped celery, diced onions, minced garlic, and shredded carrots, and cook for 2-3 minutes until the onions become see-through.
- Introduce the cooked and diced chicken, pour in the low-sodium chicken broth, season with salt, pepper, and thyme, and bring everything to a rolling boil. Gently incorporate the potato gnocchi, allowing it to boil for another 3-4 minutes, then lower the heat to a simmer and let it cook for 10 minutes.
- Add the milk and roughly chopped spinach, cooking for an additional 1-2 minutes until the spinach is soft. Sample the soup, adjust the seasoning with more salt and pepper if necessary, and serve hot.
Notes
- For a heartier soup, increase the amount of diced chicken breasts for added protein and flavor.
- To make the soup creamier, substitute whole milk for low-fat milk for a richer texture.
- Enhance the flavor by using fresh herbs like parsley or chives as a garnish before serving.
