Ingredients

  • – 2 large chicken breasts (500g)
  • – 1/2 teaspoon garlic powder (2.5 ml)
  • – Salt & pepper to taste
  • – Flour for dredging
  • – 1 tablespoon olive oil (15 ml)
  • – 2 tablespoons (30 ml) vegetable oil divided
  • – 3 cloves garlic minced
  • – 1/2 cup (120 ml) fruit juice
  • – 1/4 cup chicken broth (60 ml)
  • – 1/4 teaspoon (1 ml) Italian seasoning
  • – 1 cup heavy/whipping cream (240 ml)
  • – 2 cups (loosely packed) fresh baby spinach (60g)
  • – 1/2 cup (120 ml) freshly grated cheese


Instructions

  1. Slice the chicken breasts horizontally to obtain four thinner pieces. Sprinkle garlic powder, salt, and pepper on both sides of the chicken. Lightly coat the chicken pieces with flour.
  2. In a skillet, heat olive oil and one tablespoon of vegetable oil over medium-high heat. Cook the chicken for 4-5 minutes per side until they are nicely browned. Remove the skillet from the heat and transfer the chicken to a separate plate.
  3. Place the skillet back on the heat and add the remaining vegetable oil along with the minced garlic. Sauté for approximately 30 seconds.
  4. Pour the fruit juice, chicken broth, and Italian seasoning into the skillet. Allow the mixture to simmer for 3-5 minutes until it reduces significantly.
  5. Incorporate the heavy cream, allowing it to simmer for 2 minutes before adding the spinach. Stir to combine.
  6. Return the chicken to the skillet and continue cooking over medium heat for another 4-5 minutes, ensuring the chicken is thoroughly cooked and the sauce thickens slightly. Before serving, sprinkle freshly grated cheese over the chicken and sauce, and adjust the seasoning with additional salt and pepper if necessary.
