Description

Delicious and easy chicken fajita meal prep bowls, packed with flavor and perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked rice or quinoa (for serving)
  • Optional toppings: avocado, cilantro, lime


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Add chicken, bell peppers, and onion to the bowl and toss to coat.
  4. Spread the mixture on a baking sheet and bake for 25-30 minutes, until the chicken is cooked through.
  5. Let the chicken rest for a few minutes before slicing.
  6. Divide cooked rice or quinoa into meal prep containers and top with the chicken and vegetables.
  7. Add optional toppings as desired.
  8. Store in the refrigerator for up to a week.
