Ingredients
- 2 chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cooked rice or quinoa (for serving)
- Optional toppings: avocado, cilantro, lime
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Add chicken, bell peppers, and onion to the bowl and toss to coat.
- Spread the mixture on a baking sheet and bake for 25-30 minutes, until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing.
- Divide cooked rice or quinoa into meal prep containers and top with the chicken and vegetables.
- Add optional toppings as desired.
- Store in the refrigerator for up to a week.
