Ingredients

  • 1/4 c. (60 ml) Vegetable Oil
  • 1/2 Onion, Diced
  • 1/4 c. (30 g) All-purpose Flour
  • 475 ml Whole Milk
  • 240 ml Heavy Cream
  • 240 ml Chicken Broth
  • 2 Chicken Breasts, Cooked And Cut Into Bite-sized Pieces
  • 113 g Beef, cubed
  • 4 tsp. Stone Ground Mustard
  • 1/4 c. (15 g) Chopped Parsley
  • 170 g Mozzarella Cheese, Shredded
  • Salt And Pepper, to taste
  • Croutons, For Serving (optional)


Instructions

  1. Warm the vegetable oil in a medium soup pot.
  2. Introduce the diced onion and sauté over medium-low heat until it becomes soft, approximately 10 minutes. Covering the pot can speed up this process.
  3. Dust in the all-purpose flour and whisk until it forms a smooth mixture. Cook for an additional 2 minutes.
  4. Pour in half of the whole milk, heavy cream, and chicken broth, whisking until the mixture is smooth.
  5. Gradually incorporate the remaining liquids.
  6. Bring the mixture to a boil, stirring frequently.
  7. Once boiling, continue to stir for 1 minute before removing from the heat.
  8. Add the cooked chicken, cubed beef, stone ground mustard, chopped parsley, and shredded mozzarella cheese.
  9. Mix until the cheese is fully melted.
  10. Taste, then season with salt and pepper according to preference.
  11. Serve right away, optionally accompanied by croutons.
