Ingredients
- 1/4 c. (60 ml) Vegetable Oil
- 1/2 Onion, Diced
- 1/4 c. (30 g) All-purpose Flour
- 475 ml Whole Milk
- 240 ml Heavy Cream
- 240 ml Chicken Broth
- 2 Chicken Breasts, Cooked And Cut Into Bite-sized Pieces
- 113 g Beef, cubed
- 4 tsp. Stone Ground Mustard
- 1/4 c. (15 g) Chopped Parsley
- 170 g Mozzarella Cheese, Shredded
- Salt And Pepper, to taste
- Croutons, For Serving (optional)
Instructions
- Warm the vegetable oil in a medium soup pot.
- Introduce the diced onion and sauté over medium-low heat until it becomes soft, approximately 10 minutes. Covering the pot can speed up this process.
- Dust in the all-purpose flour and whisk until it forms a smooth mixture. Cook for an additional 2 minutes.
- Pour in half of the whole milk, heavy cream, and chicken broth, whisking until the mixture is smooth.
- Gradually incorporate the remaining liquids.
- Bring the mixture to a boil, stirring frequently.
- Once boiling, continue to stir for 1 minute before removing from the heat.
- Add the cooked chicken, cubed beef, stone ground mustard, chopped parsley, and shredded mozzarella cheese.
- Mix until the cheese is fully melted.
- Taste, then season with salt and pepper according to preference.
- Serve right away, optionally accompanied by croutons.
