A delightful twist on a classic dish that combines ground chicken, layers of cheese, and savory ham into a comforting meatloaf.
Ingredients
- 2 lbs ground chicken
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1/2 cup milk
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon dried parsley
- 6 slices Swiss cheese (or provolone, mozzarella, etc.)
- 6 slices deli ham
- 1/2 cup shredded Swiss cheese (optional)
- 2 tablespoons Dijon mustard mixed with 2 tablespoons mayonnaise (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a loaf pan.
- Combine the ground chicken, breadcrumbs, eggs, milk, onion, garlic, Dijon mustard, salt, black pepper, paprika, and dried parsley in a large bowl and mix well.
- Spread half of the chicken mixture evenly into the bottom of the prepared loaf pan.
- Layer the sliced ham over the chicken base, followed by the slices of cheese.
- Gently spread the remaining chicken mixture over the filling and press the edges to seal.
- Bake the meatloaf for 45–50 minutes, ensuring an internal temperature of 165°F (74°C).
- Spread the Dijon-mayo mixture over the top and sprinkle shredded Swiss cheese during the last 5 minutes of baking.
- Allow the meatloaf to rest for 10 minutes before slicing.
Notes
For added flavor, consider using seasoned breadcrumbs or mixing in fresh herbs. Serve with roasted vegetables or mashed potatoes.
