Description

A delightful twist on a classic dish that combines ground chicken, layers of cheese, and savory ham into a comforting meatloaf.


Ingredients

  • 2 lbs ground chicken
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon dried parsley
  • 6 slices Swiss cheese (or provolone, mozzarella, etc.)
  • 6 slices deli ham
  • 1/2 cup shredded Swiss cheese (optional)
  • 2 tablespoons Dijon mustard mixed with 2 tablespoons mayonnaise (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan.
  2. Combine the ground chicken, breadcrumbs, eggs, milk, onion, garlic, Dijon mustard, salt, black pepper, paprika, and dried parsley in a large bowl and mix well.
  3. Spread half of the chicken mixture evenly into the bottom of the prepared loaf pan.
  4. Layer the sliced ham over the chicken base, followed by the slices of cheese.
  5. Gently spread the remaining chicken mixture over the filling and press the edges to seal.
  6. Bake the meatloaf for 45–50 minutes, ensuring an internal temperature of 165°F (74°C).
  7. Spread the Dijon-mayo mixture over the top and sprinkle shredded Swiss cheese during the last 5 minutes of baking.
  8. Allow the meatloaf to rest for 10 minutes before slicing.

Notes

For added flavor, consider using seasoned breadcrumbs or mixing in fresh herbs. Serve with roasted vegetables or mashed potatoes.
