Ingredients

  • – 1/4 cup (60 ml) vegetable oil
  • – 3 tablespoons (45 ml) lime juice
  • – 3 chipotle chilis in adobo sauce, finely chopped, plus 1 1/2 tablespoons (23 ml) adobo sauce
  • – 1 1/2 teaspoons (8 ml) garlic powder
  • – 3/4 teaspoon (4 ml) salt
  • – 1 1/2 pounds (680 g) chicken breast, cut into strips
  • – 1 cup (240 ml) long-grain white rice, rinsed
  • – 1 1/2 cups (360 ml) water
  • – 1/4 teaspoon (1 ml) salt, plus more to taste
  • – 1 lime, zested plus 2 tablespoons (30 ml) fresh lime juice
  • – 1/4 cup (60 ml) chopped cilantro
  • – 1 head romaine lettuce, chopped
  • – 1 cup (240 ml) tomatoes, diced
  • – 1 avocado, chopped
  • – 1 cup (240 ml) frozen corn, thawed
  • – 1 (15-ounce) can black beans, rinsed and drained
  • – 1/2 small red onion, chopped


Instructions

  1. To prepare the chicken, combine the vegetable oil, lime juice, finely chopped chipotle chilis, adobo sauce, garlic powder, and salt in a large mixing bowl. Toss the chicken strips in this mixture until they are well coated. Cover the bowl and place it in the refrigerator for a minimum of 2 hours, or overnight for better flavor infusion.
  2. Preheat a large skillet over medium-high heat. Take the marinated chicken out of the fridge, remove it from the marinade, and place it in the pan. Cook while stirring until the chicken is thoroughly cooked, which should take approximately 5 minutes. Set the cooked chicken aside.
  3. For the rice, bring water to a boil and add the salt along with the rinsed rice. Once boiling, reduce the heat, cover the pot, and allow it to simmer until the liquid is absorbed and the rice becomes tender, typically for 15-18 minutes. After cooking, uncover the pot, fluff the rice with a fork, and mix in the lime zest, fresh lime juice, chopped cilantro, and adjust salt if needed.
  4. To put together the dish, layer the cooked rice and chopped romaine lettuce at the bottom of a serving bowl. Arrange the cooked chicken on top, followed by a layer of diced tomatoes, chopped avocado, thawed corn, rinsed black beans, and chopped red onions.
