A hearty casserole combining crispy tater tots with creamy ranch-infused chicken, bacon, and cheese, perfect for family gatherings.
Ingredients
- 1 package (32 ounce) frozen potato tots
- 1 can (10.5 ounce) cream of chicken soup
- 1 cup sour cream
- 2/3 cup ranch dressing
- 1 packet ranch dressing mix
- 1/8 teaspoon cracked black pepper
- 1/2 teaspoon granulated garlic
- 5 cups shredded rotisserie chicken
- 4 ounces sharp cheddar cheese, shredded
- 1 1/4 cups cooked and crumbled bacon (about 10 slices), divided
- Sliced scallions, for garnish
Instructions
- Preheat your oven to 450°F. Lightly grease a 9×13-inch baking dish with cooking spray.
- Spread the frozen potato tots on a large baking sheet in an even layer. Bake for approximately 35 minutes, or until golden and crispy. Remove from the oven and set aside. Reduce oven temperature to 375°F.
- In a large mixing bowl, whisk together the cream of chicken soup, sour cream, ranch dressing, ranch dressing mix, cracked black pepper, and granulated garlic until fully combined and smooth.
- Fold in the shredded rotisserie chicken, shredded Cheddar cheese, and 1 cup of the crumbled bacon, ensuring every piece is coated with the creamy ranch mixture.
- Transfer the chicken mixture to the prepared baking dish and spread it evenly.
- Carefully arrange the baked tater tots on top of the chicken mixture.
- Place the casserole in the preheated oven and bake for 30–35 minutes, until the edges are bubbling and the tater tots are golden.
- Remove from the oven and sprinkle the remaining 1/4 cup of crumbled bacon on top. Garnish with sliced scallions. Serve hot and enjoy!
Notes
For extra flavor, add jalapeños or green chilies. Perfect for meal prep and can be stored for up to three days.
