Description
A comforting blend of tender chicken, crispy bacon, and creamy ranch dressing with hearty pasta, perfect for meal prep.
Ingredients
- 8 oz pasta of choice (high-protein or whole wheat works great)
- 2 chicken breasts, cut in half lengthwise (4 cutlets)
- Salt & pepper, to taste
- 8 slices bacon
- 1 head broccoli, chopped
- 3/4 cup shredded cheddar cheese
- 3/4 cup plain Greek yogurt
- 1 packet ranch seasoning
- 3 tbsp mayonnaise
Instructions
- Cook the pasta according to the package instructions.
- In the last 2–3 minutes of cooking, add the broccoli to soften.
- Drain the pasta and broccoli, setting them aside.
- Season the chicken with salt and pepper.
- Pan-sear or bake the chicken until golden and cooked through.
- Slice the chicken into strips.
- Cook the bacon until crisp, then crumble it.
- In a bowl, whisk together the Greek yogurt, ranch seasoning, and mayo until smooth.
- In a large bowl or meal prep containers, combine pasta, chicken, broccoli, bacon, and cheese.
- Toss with the ranch sauce.
Notes
For added flavor, consider marinating the chicken in ranch dressing for a few hours. Substitute bacon with turkey bacon for a healthier option.
