A delicious Chicken Avocado Melt Sandwich featuring juicy chicken, creamy avocado, and melty cheese, perfect for any meal.
Ingredients
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook the chicken for 6–7 minutes per side until fully cooked, then let it rest before slicing thinly.
- Slice the avocado, red onion, and tomato. Prepare the cheese slices and set aside.
- Spread mayonnaise and Dijon mustard on each slice of bread.
- On two slices of bread, layer the chicken, avocado, cheese, red onion, and tomato.
- Top with the remaining bread slices, mayo side down.
- Heat a skillet or grill pan over medium heat.
- Add butter or olive oil and cook the sandwiches for 3–4 minutes per side until golden and the cheese is melted.
- Press gently with a spatula while grilling.
- Remove from heat, let cool for one minute, slice in half, and serve warm.
Notes
For a crunchier texture, use day-old bread. Experiment with different cheeses for unique flavor.
