Ingredients

  • 2 tablespoons vegetable oil (30 ml) divided
  • 1 pound beef slices
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 carrot, large, peeled and cubed into very small cubes
  • 5 tomatoes, chopped
  • 15 oz red kidney beans (from the can, drained)
  • 3 cups fresh spinach
  • 4 garlic cloves, minced
  • 32 oz beef broth (4 cups)
  • 2 cups water
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil


Instructions

  1. Generously coat the beef slices with paprika, oregano, basil, and salt.
  2. In a large soup pot, warm 1 tablespoon of vegetable oil over medium-high heat. Place the beef slices in the pot and cook on medium-high until they are browned on each side. The beef does not need to be fully cooked at this stage, as it will finish cooking in the soup.
  3. Add another tablespoon of vegetable oil to the same pot. Add the chopped onion, green bell pepper, and cubed carrot, cooking for another minute on medium-high heat.
  4. Incorporate the chopped tomatoes, red kidney beans, fresh spinach, and minced garlic into the pot.
  5. Pour in the beef broth and water. Sprinkle in 1/2 teaspoon of oregano and 1/2 teaspoon of basil.
  6. Increase the heat to bring the mixture to a boil, then reduce the heat to let it simmer for approximately 20-30 minutes, until the carrots are tender and the beef is completely cooked. Adjust the seasoning with salt to taste.

  • Consider using homemade beef broth for a more flavorful soup.
  • Add zucchini or corn for extra nutrition and texture.
  • Thicken the soup by mashing some red kidney beans.
