A comforting Chicken and Spinach Casserole with Cream Cheese that brings families together with its delightful flavors.
Ingredients
- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F and grease a 9×13 inch baking dish.
- Cut the chicken breasts in half horizontally to create four cutlets and pound the thicker ends to uniform thickness.
- Whisk together olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl.
- Add the chicken cutlets to the marinade, toss to coat, and chill in the fridge for 15 to 30 minutes.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat.
- Add spinach and cook for 2 to 3 minutes until wilted, then set aside.
- Beat cream cheese until smooth, then mix in wilted spinach and half a cup of mozzarella cheese and Parmesan cheese (if using).
- Remove chicken from the fridge, letting excess marinade drip off, and optionally sear for 1-2 minutes per side.
- Arrange chicken in the prepared baking dish and spread the creamy spinach mixture over the top.
- Sprinkle the remaining mozzarella cheese on top and bake for 20 to 30 minutes until cooked through.
- Let stand for 5 minutes before serving.
Notes
Feel free to substitute Greek yogurt for cream cheese for a lighter version. Add herbs and spices according to your preference.
