Description

A comforting Chicken and Spinach Casserole with Cream Cheese that brings families together with its delightful flavors.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 400°F and grease a 9×13 inch baking dish.
  2. Cut the chicken breasts in half horizontally to create four cutlets and pound the thicker ends to uniform thickness.
  3. Whisk together olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl.
  4. Add the chicken cutlets to the marinade, toss to coat, and chill in the fridge for 15 to 30 minutes.
  5. Heat the remaining tablespoon of olive oil in a skillet over medium heat.
  6. Add spinach and cook for 2 to 3 minutes until wilted, then set aside.
  7. Beat cream cheese until smooth, then mix in wilted spinach and half a cup of mozzarella cheese and Parmesan cheese (if using).
  8. Remove chicken from the fridge, letting excess marinade drip off, and optionally sear for 1-2 minutes per side.
  9. Arrange chicken in the prepared baking dish and spread the creamy spinach mixture over the top.
  10. Sprinkle the remaining mozzarella cheese on top and bake for 20 to 30 minutes until cooked through.
  11. Let stand for 5 minutes before serving.

Notes

Feel free to substitute Greek yogurt for cream cheese for a lighter version. Add herbs and spices according to your preference.
