Ingredients
- – 1 tbsp olive oil (15 ml)
- – 1 tbsp vegetable oil (or more oil) (15 ml)
- – 2 garlic cloves, minced
- – 1 onion, chopped
- – 3 carrots, halved then cut into 1 cm / 2/5″ slices (quarter if really thick)
- – 3 celery ribs, cut into 1 cm / 2/5″ slices
- – 3 g Vegetable stock powder, or 2 x vegetable or chicken bouillon cube, or 2 g powder
- – 1/2 tsp (3 ml) dried parsley
- – 1/2 tsp (3 ml) dried thyme, optional
- – 1/4 tsp (1 ml) black pepper, finely ground
- – 960 ml chicken broth, low sodium
- – 960 ml water
- – 600 g bone-in, skinless chicken thighs, 4 x 150g/5oz
- – 180 g long grain white rice, uncooked
- – Salt, adjust to taste
- – 1 tbsp finely chopped parsley (optional) (15 ml)
Instructions
- Pour olive oil and vegetable oil into a big pot and heat on medium-high. Toss in the chopped onion and minced garlic, cooking them for about 5 minutes until the onion becomes clear.
- Add in the sliced carrots and celery, stirring for a minute.
- Incorporate the vegetable stock powder, dried parsley, thyme if desired, black pepper, chicken broth, and water. Mix well and then place the chicken thighs in.
- Place a lid on the pot and let it gently simmer on medium-low for 30 minutes, adjusting the heat to maintain a steady, moderate bubbling. Occasionally skim off any foam that forms on the surface, although this step is not mandatory for clarity.
- Take off the lid and add the rice. Stir it in, cover the pot again, and let it simmer for another 15 minutes.
- Take the pot off the heat.
- Transfer the chicken to a large bowl, shred it using two forks, discard the bones, and return the shredded chicken to the soup.
- Mix in half of the chopped parsley, taste the soup for salt, and add more if necessary. Serve the soup, garnishing with the remaining parsley.
