Description

Deliciously soft and thick chewy chocolate chip cookies that evoke warm memories and bring joy to gatherings.


Ingredients

  • 2 and 1/4 cups (281g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, melted and cooled
  • 3/4 cup (150g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 and 1/4 cups (225g) semi-sweet chocolate chips or chunks


Instructions

  1. In a large bowl, whisk together the flour, baking soda, cornstarch, and salt. Set aside.
  2. In a separate bowl, combine the melted butter, brown sugar, and granulated sugar, mixing until smooth.
  3. Add the egg, egg yolk, and vanilla extract to the buttery mixture. Stir until completely combined.
  4. Gradually incorporate the wet ingredients into the dry ingredients using a spatula until the dough is soft and shiny.
  5. Gently fold in the semi-sweet chocolate chips or chunks.
  6. Cover the dough and chill it in the refrigerator for at least 2 hours or overnight.
  7. Preheat your oven to 325°F (163°C) and line baking sheets with parchment paper.
  8. Scoop about 2 heaping tablespoons of dough for each cookie and roll into tall, rough balls.
  9. Place on baking sheets about 3 inches apart.
  10. Bake for 13–14 minutes until edges are golden and centers appear soft.
  11. Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
  12. For an extra chocolatey touch, press a few additional chocolate chips on top while still warm.

Experiment with different types of chocolate or add-ins like nuts for variety.
