Description
Deliciously soft and thick chewy chocolate chip cookies that evoke warm memories and bring joy to gatherings.
Ingredients
- 2 and 1/4 cups (281g) all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon salt
- 3/4 cup (170g) unsalted butter, melted and cooled
- 3/4 cup (150g) packed brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg + 1 egg yolk
- 2 teaspoons vanilla extract
- 1 and 1/4 cups (225g) semi-sweet chocolate chips or chunks
Instructions
- In a large bowl, whisk together the flour, baking soda, cornstarch, and salt. Set aside.
- In a separate bowl, combine the melted butter, brown sugar, and granulated sugar, mixing until smooth.
- Add the egg, egg yolk, and vanilla extract to the buttery mixture. Stir until completely combined.
- Gradually incorporate the wet ingredients into the dry ingredients using a spatula until the dough is soft and shiny.
- Gently fold in the semi-sweet chocolate chips or chunks.
- Cover the dough and chill it in the refrigerator for at least 2 hours or overnight.
- Preheat your oven to 325°F (163°C) and line baking sheets with parchment paper.
- Scoop about 2 heaping tablespoons of dough for each cookie and roll into tall, rough balls.
- Place on baking sheets about 3 inches apart.
- Bake for 13–14 minutes until edges are golden and centers appear soft.
- Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
- For an extra chocolatey touch, press a few additional chocolate chips on top while still warm.
Notes
Experiment with different types of chocolate or add-ins like nuts for variety.
