Delightful cookies with a chewy texture, made from ripe bananas and oats, perfect as a snack or lunchbox treat.
Ingredients
- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Chocolate chips or nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, peanut butter, honey or maple syrup, vanilla extract, baking powder, and salt. Stir until well combined.
- If desired, fold in chocolate chips or nuts.
- Drop spoonfuls of the cookie mixture onto a parchment-lined baking sheet.
- Bake for 12-15 minutes, or until the edges are golden.
- Allow to cool slightly before transferring to a wire rack.
Notes
Using very ripe bananas enhances sweetness. For a nut-free version, opt for sunflower seed butter. Feel free to experiment with mix-ins such as raisins or dried cranberries.
