Description

Delightful cookies with a chewy texture, made from ripe bananas and oats, perfect as a snack or lunchbox treat.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Chocolate chips or nuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, peanut butter, honey or maple syrup, vanilla extract, baking powder, and salt. Stir until well combined.
  4. If desired, fold in chocolate chips or nuts.
  5. Drop spoonfuls of the cookie mixture onto a parchment-lined baking sheet.
  6. Bake for 12-15 minutes, or until the edges are golden.
  7. Allow to cool slightly before transferring to a wire rack.

Notes

Using very ripe bananas enhances sweetness. For a nut-free version, opt for sunflower seed butter. Feel free to experiment with mix-ins such as raisins or dried cranberries.
