A comforting and delightful cheesy taco rice dish that brings family together with its hearty flavors.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry, uncooked)
- 2 cups shredded cheese (any variety)
Instructions
- In a large skillet pan over medium-high heat, add the olive oil, ground beef, and diced yellow onion.
- Cook and crumble the ground beef until it’s no longer pink and the onions are translucent, about 8-10 minutes.
- Be sure to drain any excess grease from the pan after cooking.
- Add the minced garlic and taco seasoning packet into the cooked ground beef. Stir together and cook for an additional 30 seconds.
- Stir in the beef broth, Rotel, and tomato paste until combined. Bring to a boil.
- Once boiling, mix in the dry long-grain white rice and bring back to a boil.
- After the second boiling, cover and reduce heat to medium-low. Cook for 15 minutes.
- After 15 minutes, sprinkle the shredded cheese evenly over the dish. Cook for another 5 minutes until melted.
Notes
Serve with toppings like sour cream, guacamole, or pico de gallo for added flavor.
