Description

A comforting and delightful cheesy taco rice dish that brings family together with its hearty flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)


Instructions

  1. In a large skillet pan over medium-high heat, add the olive oil, ground beef, and diced yellow onion.
  2. Cook and crumble the ground beef until it’s no longer pink and the onions are translucent, about 8-10 minutes.
  3. Be sure to drain any excess grease from the pan after cooking.
  4. Add the minced garlic and taco seasoning packet into the cooked ground beef. Stir together and cook for an additional 30 seconds.
  5. Stir in the beef broth, Rotel, and tomato paste until combined. Bring to a boil.
  6. Once boiling, mix in the dry long-grain white rice and bring back to a boil.
  7. After the second boiling, cover and reduce heat to medium-low. Cook for 15 minutes.
  8. After 15 minutes, sprinkle the shredded cheese evenly over the dish. Cook for another 5 minutes until melted.

Notes

Serve with toppings like sour cream, guacamole, or pico de gallo for added flavor.
