Ingredients
- 12 oz (340 g) frozen mashed potatoes
- 1 egg yolk
- 1/3 cup (80 g) shredded cheese
- 1/4 tsp (1 ml) salt
- 1/4 tsp (1 ml) garlic powder
- 1/4 tsp (1 ml) smoked paprika
- 1/4 tsp (1 ml) black pepper
- 2 tbsp (30 ml) fresh spinach, chopped
- 2 tbsp (30 g) bread crumbs
- 1/2 cup (60 g) small cubed cheddar cheese
- 1 egg, beaten
- 1 cup (120 g) Italian breadcrumbs
- 1/4 cup (60 ml) olive oil for frying (may substitute vegetable, canola, or any other frying oil)
Instructions
- Put the frozen mashed potatoes in a microwave-safe container, add ¼ cup of water, and microwave on high for 4 minutes. Stir them once done, then microwave again for another 4 minutes. Let the mashed potatoes chill in the fridge until they are cool.
- In a large mixing bowl, blend the cooled mashed potatoes with the shredded cheese, chopped spinach, egg yolk, 2 tablespoons of bread crumbs, salt, black pepper, garlic powder, and smoked paprika. Mix until everything is well combined.
- Prepare two shallow bowls, one with the beaten egg and the other with Italian breadcrumbs.
- Shape the potato mixture into balls that are about 1 ½ inches in size. Insert a small cube of cheddar cheese into each ball, ensuring it is completely enclosed.
- Dip each potato ball into the beaten egg, then coat it with the breadcrumbs. Continue this process until all the potato balls are covered.
- Warm the oil in a skillet and fry the croquettes until they are golden brown on all sides, which should take about 2-3 minutes. Remove them from the oil and let them cool.
Notes
- Chill mashed potatoes completely before mixing to prevent stickiness.
- Mix cheddar and mozzarella for extra flavor in the croquettes.
