Ingredients

  • 12 oz (340 g) frozen mashed potatoes
  • 1 egg yolk
  • 1/3 cup (80 g) shredded cheese
  • 1/4 tsp (1 ml) salt
  • 1/4 tsp (1 ml) garlic powder
  • 1/4 tsp (1 ml) smoked paprika
  • 1/4 tsp (1 ml) black pepper
  • 2 tbsp (30 ml) fresh spinach, chopped
  • 2 tbsp (30 g) bread crumbs
  • 1/2 cup (60 g) small cubed cheddar cheese
  • 1 egg, beaten
  • 1 cup (120 g) Italian breadcrumbs
  • 1/4 cup (60 ml) olive oil for frying (may substitute vegetable, canola, or any other frying oil)


Instructions

  1. Put the frozen mashed potatoes in a microwave-safe container, add ¼ cup of water, and microwave on high for 4 minutes. Stir them once done, then microwave again for another 4 minutes. Let the mashed potatoes chill in the fridge until they are cool.
  2. In a large mixing bowl, blend the cooled mashed potatoes with the shredded cheese, chopped spinach, egg yolk, 2 tablespoons of bread crumbs, salt, black pepper, garlic powder, and smoked paprika. Mix until everything is well combined.
  3. Prepare two shallow bowls, one with the beaten egg and the other with Italian breadcrumbs.
  4. Shape the potato mixture into balls that are about 1 ½ inches in size. Insert a small cube of cheddar cheese into each ball, ensuring it is completely enclosed.
  5. Dip each potato ball into the beaten egg, then coat it with the breadcrumbs. Continue this process until all the potato balls are covered.
  6. Warm the oil in a skillet and fry the croquettes until they are golden brown on all sides, which should take about 2-3 minutes. Remove them from the oil and let them cool.

Notes

  • Chill mashed potatoes completely before mixing to prevent stickiness.
  • Mix cheddar and mozzarella for extra flavor in the croquettes.
