Delicious and easy-to-make cottage cheese egg bites, perfect for breakfast, snacks, or meal prep.
Ingredients
- 1 cup cottage cheese
- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (such as bell peppers, spinach, or onions)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the cottage cheese, eggs, salt, and pepper until well combined.
- Stir in the shredded cheese and diced vegetables.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture evenly into the muffin tin slots, filling them about halfway.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
- Allow to cool for a few minutes before removing from the muffin tin.
- Enjoy warm or store in the fridge for meal prep!
Notes
Feel free to experiment with different vegetables and cheeses. These egg bites can also be made with egg substitutes or dairy-free cheese if needed.
